The point here is that the question of "can [insert your preferred baked good here] be vegan?" is almost as normal for vegans to hear as "where do you get your protein?"
Below, I've included 3 awesome cupcake recipes that are my go-to's for creating delicious cakes and cupcakes.
The first recipe is a simple one that does the most for emphasizing individual flavor. I feel like there's a wide-spread misconception that vegan baked goods are gunna be really bland and really starchy. This recipe is great because not only is the flavor the perfect sweet/soft/fruity that I'm looking for in a fruit-focused cake, but it's also the perfect texture. Light, fluffy, and full in the cake........ smooth and rich in the cream. Give this one a try!

One of my favorite all time cake varieties is German Chocolate cake. It's the perfect addition of savory to your delectable sweet treat. Caramel was one of those candies I always looked forward to as a kid. You know... the chewy circle with the cream in the middle?
Unfortunately, those specific candies are off the table now for me as a vegan. That doesn't mean I can't enjoy caramel at all, however.
This recipe is delicious, easy, and not so far over the sugar-line that it has to wait until cheat day.

#3. Peanut Butter Banana Pancakes
Being that my favorite all-time protein shake combo is banana peanut butter, I figured this would be a solid cupcake combo as well. Boy was I right! This recipe is perfectly creamy while still adding that girth to the banana flavor that I personally crave. VEGAN PEANUT BUTTER & BANANA CUPCAKES
INGREDIENTS1/2 cup almond yoghurt 3 Tbsp Pic’s Peanut butter 1 ripe banana 4 tbsp agave 2 tbsp gluten free flour 1/2 oat flour 1/2 cup ground almonds 2 tsp baking powder 1/3 tsp bicarb Pinch of salt Frosting: 125g vanilla coconut yoghurt Tbsp Agave nectar INSTRUCTIONSPreheat your oven to 180c and line a cupcake tray with cases. In a bowl, combine the agave, mashed banana, peanut butter and almond yoghurt and mix everything together. Add all of the dry ingredients and fold these into the mixture until everything is well combined. Transfer the batter into your cupcake cases and pop these into the oven to bake for around 14 minutes. Allow to cool on a wire wrack. Once your cakes are cooled, mix together the coconut yoghurt and agave nectar and spread a dollop of this on top of each of the cakes. Decorate with toppings of choice and enjoy! NUTRITION

A few days ago my friend sent me a recipe for cauliflower wings.🌝🌿 I did not follow the recipe to the T.... which is probably why they don't look like the pinterest pictures. None the less... it was delicious. Can't complain 😄
For vegans, finding savory foods that are similar in comfort value to old meat-eater favorites like buffalo wings can be hard. I know this is one of the things that was a struggle for me originally. Experimenting with cauliflower.... tempeh.... tofu etc is necessary in combating the boring vegan food stereotype.
Get creative! There are delicious foods out there which are a lot easier to create than you'd think!
1 cup almond milk
1 cup white or whole wheat flour
1 teaspoon garlic powder pepper to taste
1 tablespoon oil
1 head of cauliflower (chopped into bite size pieces)
1 cup Panko bread crumbs
1/2 cup buffalo sauce
4 tbsp Earth Balance vegan butter
1/2 cup Follow Your Heart vegan blue cheese
2 tbsp chopped green onion

-Preheat oven to 450 degrees.
Cut cauliflower into bite sized pieces discarding the core.
Combine almond milk, flour, garlic powder, pepper and olive oil in a large bowl. Create a separate bowl with the Panko. Dip the pieces in the batter (let any excess drip off), then coat in Panko, place on a foil lined pan and bake 15 minutes.
-Melt buffalo sauce with butter on the stove or in the microwave. (optional) Remove from the oven and gently toss in the buffalo sauce. Generously coat the cauliflower, but don't soak. Place back on the pan and bake an additional 5-10 minutes or until cauliflower is tender crisp.
-Top with vegan Follow Your Heart blue cheese dressing and green onion and serve with carrots and celery.
It's easy. It's tasty. It's cauliflower. You eat it and you're happy you did.

1. In a large skillet, heat the oil over medium-high heat. Add the shallot and sauté for 3 minutes, until softened.
2. Reduce heat to low and add the ketchup, honey, vinegar, paprika, Worcestershire sauce and chili powder. Stir for 3 minutes until well combined. Add the jackfruit and heat through for 5 minutes.
3. Transfer a quarter of the jackfruit to each of the buns. Serve while hot.

This is a very easy recipe to modify. You can add any vegetables you'd like. It's important to remember to cook them until they're tender.
You can also change the garlic powder and soy sauce to be another combination of flavor for your stir fry. You could do a Basil and Cumin, or perhaps a more sour kimche-type taste. The key is that you need to marinade the tofu in your concoction to really bring out the flavor.

Chia seeds work in the exact same way as flax seeds do to replace eggs in vegan baking. Just mix 1-2 Tbsp of chia seeds with hot water and let it sit a bit before mixing it in with the rest of the ingredients. Chia seeds (and flax) are also great vegan sources of Omega 3.

Vegan Barbecue Ribs
First an foremost, let's tackle the colossus of summer catering, the gargantuan of Good Eats! Everyone loves ribs. You may not like the fact that a living creature was brutally murdered to then be eaten, but I bet my left pinky toe you didn't go vegan because you didn't like the taste!
These "ribs" will be made with seitan, not to be confused with the dark lord who gave humans the idea they should eat other animals(this is in reference to Donald Trump, who did you think I meant?).
Quick reference: Seitan is wheat protein isolate. It's essentially washed wheat gluten, so it's the raw proteins. Gains bitch.
